A Workshop on Creating in the Kitchen

Recommended for those with more advanced cooking skills, who want to get away from recipes and start creating on their own. In this 6-hour workshop, students will learn the building blocks to creating their own dishes using different styles of cooking and different flavor profiles, focusing on poultry as the main ingredient. After an initial lecture and round-table discussion with the chefs regarding different methods of cooking, flavor combinations, textures, portioning, as well as different styles of sauces, students will experiment and create their own dishes under the guidance of the chefs. All manner of herbs, spices, vegetables, stock, dairy items, grains & pasta will be on hand to allow maximum creativity. Students may create as many dishes as time permits, with the chefs on hand to guide them, make suggestions, answer questions and critique results. This is your chance to experiment, explore and create! There will be a 30-minute lunch break, with a light lunch prepared for you by the chefs.
