In this series of classes featuring regional French cuisine, Chef Maurice will perform his culinary magic, and share the secrets of more than 50 years experience working in the finest kitchens throughout France, Morocco, Portugal, Iran and Lebanon. These classes are recommended for more advanced students.

Menu: Crème de cresson avec croutons de chèvre frais; Lotte en bouillabaisse; Gratin de fruit rouge. (Cream of watercress soup with fresh goat cheese croutons; Monkfish in bouillabaisse; Wild berries gratin.) Price: $95 per person, or $115 with wine pairings.

Menu: Tarte a l’oignon Alsacienne; Côte de porc charcutière; Spazelli; Soupe de fruits rouges. (Alsacian onion tart; Roast pork chop with traditional herbed butter noodles; red fruit soup.) Price: $95 per person, or $115 with wine pairings.

Bourgogne
Saturday, November 11, 5-9pm
Menu: Gougère de Bourgogne; Quenelle de poisson avec sauce Chablisienne; Tarte paysanne. (Little cheese puffs; Whitefish quenelle with traditional Chablis sauce; Country style apple tart.) Price: $95 per person, or $115 with wine pairings.
